Simple Turkey Stuffing

I see turkey stuffing as the mediator-in-chief, it makes sure that all components of a proper Thanksgiving meal come together harmoniously. Properly made, stuffing can save the day; add some great lovely gravy and you have all the pleasures of simple ingredients exploding in your mouth. You can always make stuffing easily by playing mix-&-match with the following items: 1. a type of bread (white, rye, cornbread, etc) 2. a type of protein (Andouille sausage, chorizo, etc) 3. an herb (sage, rosemary, etc) and 4. a whatever-you-want-ingredient such as cranberries, pecans, dates, quinoa...whatever you want! Use a liquid like a sumptuous broth to combine it all and you have created your own stuffing. Become legendary in your family and surprise them this time with something special.

RAW MATERIALS

2 slices of wholewheat bread, cubed

3 slices of white bread, cubed

1 medium onion, chopped

1 pound of Italian sausage, chopped and with casing off

2 stalks celery, chopped 

2 teaspoons dried sage

 1/2 teaspoon dried thyme

1 teaspoon hot paprika

1 large Golden Delicious apple, cored and chopped

1/2 cup dried cranberries

1/2 cup chopped pecans

2/3 cup of turkey or chicken stock

3 tablespoons of unsalted butter, melted

WAYS AND MEANS

Cook: 25min

Ready in: 40min

  1. Preheat oven to 350F. Place the bread cubes in a single layer on a large baking tray and bake for 7 minutes or until evenly toasted. Transfer to a large bowl.
  2. In a large pan, cook the Italian sausage and onions over medium heat, make sure the sausage chunks are evenly cooked until evenly browned. Add the celery, sage, paprika and thyme.  Stir sporadically and cook for 2 minutes. This will allow for the flavors to intermingle.
  3. Add the hearty sausage mixture over bread. Next, add the chopped apple, the dried cranberries and the pecans. Drizzle with poultry stock and melted butter and fold in. Spoon into turkey to loosely fill or place in a baking tray and bake in the over for 5-10 minutes, until golden brown on top.
